WebI recently did a chuck roast @ 133 degrees for 48 hours, so there was plenty of time for the fat to render. It was moderately tender and quite tasty. My objection is that there are huge globs of fat everywhere, and -- though I don't mind some amount of fat -- it was just too fat and too hard to extract the meat from some sections.
